This 21 cm blade Japanese chef's knife, also known as Gyuto in japanese, is part of the Ryoma Kurosan black forged range. A truly versatile tool, it is designed to chop, mince, slice or carve a wide variety of ingredients: vegetables, meat, fish... It is an indispensable kitchen tool for demanding amateurs and professionals alike.
The blade is forged in high-carbon Japanese steel (1%), offering excellent edge retention, a clean, long-lasting cutting edge, and the ability to improve with each sharpening. Progressive sharpening on increasingly fine-grained stones optimizes cutting finesse.
The upper part of the blade has a rough black forged look, enhanced by mechanical hammering (called Tsuchime in Japan). This typical relief is not only aesthetically pleasing: it reduces the adherence of food, particularly water-rich vegetables, facilitating smooth, precise cuts.
On the underside, the blade features a three-layer damascus with a wavy silver border, the result of meticulous forging. This pattern, called “hamon” in Japan, literally means “edge pattern”. Inherited from traditional samurai swords, it symbolizes elegance and ancestral expertise. Beyond its refined aesthetics, the hamon testifies to a complex technical process and essential functionality.
The knife features a traditional Japanese octagonal handle (Wa-handle), designed in natural walnut wood. This ergonomic shape ensures a stable, comfortable ambidextrous grip, ideal for precise, prolonged gestures.
The carefully polished wood reveals beautiful brown and chocolate-colored veins, accentuating the elegance of the whole. The handle is adorned with two polished metal rings on the front and back, one of which is engraved with the emblematic Ryoma “R”.

The name “Kurosan” literally means “black man” in Japanese. It pays homage to the historical figure Yasuke, an African slave who rose to the service of the famous daimyo Oda Nobunaga in the 16th century. Yasuke's story, both mysterious and legendary, perfectly embodies the spirit of our range: powerful, singular and symbolically charged.
Often associated as the only foreign samurai, there's no proof that he was. But we do know from the few written accounts of him that a sword was placed in his hand, notably during ceremonies at the side of the daimyo Oda Nobunaga. It's with this legend that the “hamon” on Ryoma Kurosan knives, found on prestigious swords, brilliantly completes the association of ideas of the different craft techniques implemented in the product's design.
