The auxiliary sharpener has ceramic wheels arranged in series to save you time (and money). Each wheel has a different grit intensity: the first has a #220 grit, the second a #360 grit. The elastic structure of the sharpener allows it to be used for both V-edge (Japanese) and Western U-profiles, which is one of its strengths. We simply recommend avoiding knives with an HRC hardness higher than 59° (such as Haiku Kurouchi or Kasumi, Takamura damas) or knives with a special angle (such as Masahiro, Chroma Kiseki). For these, we recommend using finer stones.
This sharpener will make it much easier to go over the stone. It prepares the edge of the blade as a coarse grit stone would, and then it is advisable to finish the sharpening with a fine grit such as #800 or even #1000. You will find that with this method, you will never again have badly sharpened knives.
