Handmade Japanese knife called Kiridashi. A short knife, easy-to-use blade for precision cutting work. Precision used and needed in the the cooking environement, baking or in other fields such as DIY (Do It Yourself) and leisure work where creation is the key word, more particularly into scrapbooking (a term from the United States for cutting out photos in a dedicated environment such as a photo album). It is also used in everyday activities as a cutter or letter opener on various materials such as paper, rubber, pipes and light fiber materials.

This Japanese blade completes the Haiku Original range which, since its beginnings, has been able to meet the different typologies and cutting needs in the kitchen and has been able to suit the needs of chefs around the world, both professionals and individuals who appreciate its lightness and its artisanal design based on a technique dating back from more than five centuries, incorporating the main principles of Japanese samurai swords making. 

The steel is heavily carburized from 0.8% to 0.9% carbon. It is a very hard Japanese steel beveled on one side only (right-handed), it rarely need to be sharpens. The blade is 7 cm long and 5 cm diagonal. It is rectangular in shape, reflecting the precision codes of Japanese Honesuki blades. The Kiridashi is accompanied by its wooden tip, also called "cap", to protect the blade from external elements but is also useful for protecting its user and which surrounds it during transport and when it is stored in a drawer or on a work table.

The wild cherry wood handle come from a forest not far from Seki, Japan (birthplace of Haiku). It is stained and water resistant. The natural wood bring softness in hands whose pronounced oval shape allows easy seating in the hand for small precision work.

Wash after use under water and dry with a clean cloth. Store in a dry place. Do not put in the dishwasher like all Japanese carbon steel.
