Japanese knife Yanagiba Haiku Original
The yanagiba knife, also known as the "willow leaf", is a thin-bladed knife specially designed for fish. In Japanese cuisine, it is used for cutting sashimi and maki-sushi, but it is also perfect for all tasks involving fish.
Chroma's Haiku line is the traditional Japanese representation of excellence in cutting tools, with strict manufacturing criteria inherited from the long experience of the Japanese in preserving the freshness of cut food. The forging and assembly system of the Haiku series has been proven for centuries.
The blade of the Haiku sashimi knife is very thin and rigid, perfectly suited for delicate cuts of fish. With a non-stick surface coating on the fish side and a concave blade on the rice side, it is designed for easy cutting of maki or other delicate dishes. It is the perfect complement to the Deba and is a great alternative to flexible knives for filleting or separating skins, or for preparing carpaccios and other delicate dishes. By reducing contact with air and bacteria, this knife preserves the organoleptic qualities and freshness of the food it cuts. With a quality sashimi knife, you can cut beautiful slices of raw fish without damaging its structure.
This preserves the flavor of the fish without being affected by the soy sauce. On the other hand, with a knife that does not cut properly, the fish fibers are damaged, preventing the flavor from developing fully. In short, it is impossible to enjoy real sashimi or sushi without a quality knife like this.
- The Haiku sashimi knife is made of molybdenum vanadium steel, with an HRC hardness of 58 +/- 1.
- The handle is made of treated Honoki wood, cemented and virtually rot-proof, making it suitable for use in restaurants.
- The sharpening is right-handed chisel type.
