Haiku is a range of traditional Japanese kitchen knives proposed by Chroma. This range meets very strict criteria, inherited from the very long experience of the Japanese in the field of cutting tools. Haiku knives are made to exacting standards, including the forging and key system, which have been tried and tested for hundreds of years. The Deba Haiku knife is designed to cut the heads and fins of fish. The heel of the blade is used to cut the fish through the bone, while the front of the blade is used to lift the fillets. This knife is not used continuously, but for specific needs such as lifting the fillets of flat fish or cutting heavy dishes with bones or gristle.
The Japanese also use this knife for chopping meat. The Deba Haiku is a heavy and massive knife, which differs from other Japanese knives because of its weight, which allows it to cut through gristle. However, it should not be used for slicing.
