The Chef knife, also known as a slicing knife, is the traditional form preferred by chefs in France and Europe for its versatile performance. However, since the introduction of Japanese knives in the West, the santoku, a Japanese slicer, is increasingly used as an alternative to the Chef knife.

• Handle: raw Honoki wood (untreated)
• Sharpening: ambidextrous V-shape (except HH03 and HH04 for right-handed users), 30° cumulative angle
