Japaness Knife Yanagiba Haiku Home

Yanagiba knife: a fine blade specially designed for working with fish. Used in Japanese cuisine for cutting sashimi and maki-sushi, it is also suitable for handling fragile flesh.

Thanks to its thin and rigid blade, the yanagiba is perfect for working with fish, especially for the most delicate cuts, by spreading the fibers without breaking them. It is the ideal complement to the Deba in traditional Japanese cuisine and offers more and more alternatives to flexible knives such as the fillet of sole, offering greater precision.
