The Honesuki is triangular in shape and can be used to cut all types of food, including meat, fruit, vegetables and even fish. It's an excellent blade, and its size of 14 cm means it can work efficiently on small and medium-sized foods, as well as meeting technical challenges where its shape makes the result easier to achieve. The Honesuki is the traditional Japanese form of boner.

Kasumi is the oldest family-run cutlery manufacturer in Seki, Japan.

Kasumi is a pioneer in kitchen Damascus steel and one of the manufacturers that has played a major role in popularising VG10 steel. The company, Seki’s oldest family-run cutlery firm, is based in this city, icon of Japanese cutlery, where workshops have been passing down exceptional craftsmanship for several generations, employing the country’s finest craftmen. Kasumi is, in fact, the oldest cutlery manufacturer in the town. Through its creations, the brand conveys a genuine heritage blending tradition, modernity and innovation. At first glance, the knives reveal numerous Japanese aesthetic codes, bridging the past, present and future. Remaining true to the high-end market since its inception, Kasumi has always been able to anticipate and master trends in cutlery.

The Kasumi HM series is the latest addition to the brand’s premium collections. It uses VG10 a with 1% high carbon steel, the same as used in the renowned Kasumi Damas and Kasumi Masterpiece ranges. This collection stands out for its hammered finish, with its sleek and distinctive design. Once again, Kasumi is among the pioneers of hammered blades on the market. More effective than simple dimples, the hammered finish makes it easier to release food from the blade as it covers the entire surface. This finish is combined with a highly elegant three-layer Damascus steel. The Damascus steel line running along the cutting edge, known as the ‘hamon’, is reminiscent of the samurai swords to which this range pays tribute, and highlights the technical mastery of Kasumi’s craftsmen.

The blade is fitted with a two-rivet bolster and a hard resin handle. Its ergonomic shape offers greater comfort for larger hands thanks to its rear stop. The knife, which is both lightweight and perfectly balanced, ensures an excellent grip and an ideal balance between the blade and the handle.

With its striking design, this hammered finish combines innovation and tradition through a three-layer Damascus steel pattern running along the edge of the blade, a true demonstration of the craftsmanship of the Kasumi artisans in Seki.
