What sets them apart : exceptional sharpness straight from the factory, the special steel grades (MBS26), the professional focus and finish – which goes beyond mere luxury – and a philosophy that prioritises functionality over ornamentation.

In Japan, the quest of perfection is not an abstract ideal, but a method. Masahiro observed that some of the carbon – a key factor in the cost and performance of the steel – is lost during conventional heat treatments ; thye company therefore developed a double-hardening process that allows the carbon content to be utilised to the full. Hardening is a crucial stage : it gives the steel its hardness and its ability to retain a long-lasting edge. The blades are heated to 62.5 HRC (approximately 1,050 °C), then rapidly cooled by immersion in a cold liquid. This thermal shock promotes the crystallisation of internal carbides and ensures cutting quality and precise sharpening. Recent research has shown that prolonged exposure to sub-zero temperatures further enhances this crystallisation. A final increase in temperature to 59 HRC then restores the blade’s essential flexibility. This is spectacular on M16, among world's most flexible filetting knives despite the high carbon contained.

Ichiichi Hattori, the grandfather of the current president, began a 12-year apprenticeship as a knife maker. Upon completing his training, he set up his own business in a workshop in Seki and began manufacturing knives.

1948: Founding of Masahiro Forging Co Ltd.

1970: Construction of a new factory in Kurachi, a district of Seki.

1974: Awarded the National Crafts Association’s Prize for Industrial Achievement.

1982: Relocation of the factory and construction of the current factory.
